Mince pie loaf cake

This festive loaf cake is part mince pie, part bread pudding, another Eastbury Kitchen favourite. It freezes very well, and wrapped up in parchment paper and string, it also makes a wonderful homemade gift to spread some festive cheer!

Ingredients

Ingredients (we recommend 2 smaller loafs as a larger loaf tends to be quite dry!)

150g softened butter

150g light brown sugar

225g self raising flour

225g mincemeat

100g currants

100g sultanas

3 medium eggs

Recipe

1. Preheat oven to 180C/Gas mark 4. Grease loaf tins with a little butter.

2. Place all the ingredients in a large bowl and mix.

3. Spoon mixture into the tins and bake for 30 minutes or until a skewer comes out clean

4. Cool in the cake tin for 15mins then remove from tin and cool on a wire rack.
