Rudolph's Rocky Road

Try this festive take on the classic Rocky Road, made by Rudolph himself! Let this delicious dessert brighten up your day and bring some festive cheer with candy canes, marshmallows and festive chocolate. 

Ingredients

100g butter, cut into cubes, plus extra for the tin 

250g biscuits, any crumbly biscuits will do, digestives or shortbread are best 

75g shelled nuts (use up a bag of whole nuts, or bits and bobs from the baking cupboard)  

100g mixed dried fruit (such as raisins, cherries or candied ginger) 

75g Christmas sweets (candy canes, marshmallows or jelly sweets) 

400g milk or dark chocolate (or a mixture of both), chopped 

140g golden syrup (weigh this straight into the bowl you will use for melting to avoid mess) 

2 tbsp sprinkles, or more sweets, to decorate (we used m&ms, crushed candy canes and mini marshmallows)  

Recipe

1. Butter and line a 20cm square tin, or square silicone mould.  

2. Break biscuits and nuts into small pieces, no smaller than a pea but not too big or they won’t stick together. 

3. Halve any larger pieces of fruit/candy and add to biscuit mix.  

4. Carefully melt butter, golden syrup and 300g of the chocolate together by placing in a heatproof bowl, over a pan of boiling water.  

5. Pour chocolate mixture over the biscuit mixture and combine with a wooden spoon, make sure to cover everything in chocolate so it sticks together! 

6. Tip mixture into your tin/silicon mould. Press down to level out the top.  

7. Melt the remaining chocolate and drizzle it over the top. Sprinkle with sweets for decoration.  

8. Cover and let cool. Place in fridge to set for a minimum of 3 hours, it will be worth the wait!
