Eastbury's classic bread pudding

Eastbury's bread pudding is a well-loved classic in our Tea Room. Made using the “all-in-one” method, this pudding could not be easier. Enjoy with a cuppa or serve with custard or ice-cream for a dessert instead.

Ingredients

Serves 6

Cooking time 1hr 30 mins

 

250g white or wholemeal bread (we like to use half and half)

80g mixed dried fruit

1 tbsp mixed spice

300ml milk

2 medium eggs

70 grams demerara sugar

Zest ½ lemon

50 g butter

White sugar to sprinkle before cooking

Recipe

1. Place all the ingredients (except white sugar) into a large bowl, then stir or scrunch through your fingers to mix everything well and completely break up the bread. Set aside for 15 minutes.

2. Heat oven to 180C/160C fan/gas 4. Butter and line 30cm rectangle cake tin or dish, add the mixture then sprinkle with white sugar.

3. Bake for 1hr 30mins until firm and golden, covering with foil if it starts to brown too much.

4. Remove from tin/dish. Cut into squares and serve warm.
